As we are heading into the holiday season it becomes more challenging to cook at home and we are scrounging around for quick easy recipes that are also super healthy. Here is a soup to fit the bill!

I stopped at my mothers the other day and she had just prepared a new soup recipe from an old magazine clipping she had saved. It was really good…and only took her 30 minutes to make. She is 85 and has always been the slowest chopper of veggies I know so it is definitely a quick meal to throw together. She loves the process of preparing vegetables (probably where I get that love). She slowly chops with joy and perfection and it’s probably a calming and meditative thing for her as it is for me when I am not in a rush.

This is loaded with great ingredients…pumpkin, black beans, tomato, red pepper, green onion and spices…all so supportive of great health.

And did I mention CUMIN??? I think it may be one of my most favorite spices. Did you know cumin has the ability to support digestion, immunity, insomnia, respiratory issues, common colds…the list goes on and on. We all need more spices in our life. They are secret powerhouses for well being.

During this crazy season try to batch cook a couple of days a week (like Sunday afternoons and Wednesdays for example) so you have lovely leftovers like this to grab out of refrigerator and heat up on the stove.

  1. Heat oil in a large saucepan over medium heat
  2. Add white and light green parts of the green onions, bell pepper and garlic; cook, stirring occasionally for 1 minute.
  3. Add beans, pumpkin, tomatoes with juice, broth and water; bring to a boil.
  4. Reduce heat to low: cook for 10 minutes.
  5. Stir in salt and cayenne pepper.
  6. Top each serving with dark green onion tops.

I used all organic products in this recipe. If your budget allows try to go as organic as you can.

I think some diced avocado on the top of this soup would also be a lovely addition to get more of the good fats into your body.
